If the host doesn't play, what role does the host then have in the game? Do they mingle , do they know specific things and just add more pressure, or what?

If the host doesn't play then you will still have things to do. You will need to read the Host Announcement and handle any planned or unplanned murders. I would also suggest reading the entire game. This would allow you to drop suttle hint sat secrets (don't reveal, just hint) to key characters that might result in conflict. You can ask each guest if they have any questions or make suggestions if you see where one would help. Our games really do run on their own, but your prompting and help could only make it better, as long as you don't reveal peoples secrets under any circumstances. These are their secrets to use as they want & you could mess up a whole situation they are working on but doing this. This would also allow you to be a host & take care of the normal party duties.
